Après avoir été viré De Dietrich, Ettore Bugatti déménagea à Strasbourg où avec E.E.C. Mathis, l'agent français de "De Dietrich", il commença la production d'une voiture appelée "Hermes", "Hermes-Simplex", ou parfois "Mathis-Hermes", bien plus évoluée que la production de "De Dietrich". L'Hermes-Simplex fut présentée au salon de Paris en 1904.
   La gamme fut élargie plus en tard en trois voire quatre modèles.
   L'Hermes fit quelques courses avec des coureurs tels que Bugatti, Gustav Langen, Emile Mathis, De Vizcaya, et Robert Dunlop.
   En 1906 ou 1907 Mathis et Bugatti se disputèrent et se séparèrent. Mathis continua sous son nom, et Bugatti alla chez Deutz à Cologne.
